the group im play with is new to D&D or new to e5. how do you go about brewing ale in D&D e5?

It's handled through tools proficiencies and background.
You could select the Guild Artisan background, as that has brewer on there.
Or, you could just acquire Brewers Supplies and the tool proficiency for them.
