I'm not on the production side of things at all, but based on what I know I'd compare it to Dimension 20 over Critical Role.
There are a definite number of episodes to this game, and a full story that needs to be told, so while it's on rails a bit in order to hit those key story beats and tell the story within the specified time frame, what happens in between all that is up in the air.
Stuff like the table reactions to all the secrets in episode 3, for example, were all genuine.
