About a month ago I had a session where I was the DM (first time and went really good imo) with my wife (first time playing) and a friend, we kept trying to keep playing since our friend had a lot of fun but kept cancelling so we said screw that and stopped trying so we want to just play my wife being a player and me the DM. I want to play LMoP and lead into Out of the Abyss or Curse of Strahd haven’t decided yet (what are your opinions?) but what I need is advice on running the written campaigns with 1 DM and 1 Player. Let my wife play multiple characters and I play an NPC or two? Just looking for general advice, really appreciate and looking forward to it!
I would homebrew but am having trouble coming up with a good story so just thinking of going with one of the official modules for a first campaign since either OotA or CoS seem really fun.
You could have an NPC and your wife can play 2 chars. This will mean more improv/RP and sheet-juggling for you and her but will mean you don't need to bother adjusting the adventures.
Or, following the advice in DMG to rebuild the encounters presented in the adventure to suit 1 player.
Or sod the pre-written adventures and use your own world. Less to worry about, easier to improv new things, and you can both help develop the world more and have more control. Personally I think 1 on 1 sessions like these are much better experience for the player when they're not following some pre-planned thing. It's just the player and an open-world to play in. It's a lot easier for a DM to improv a custom world/story to one player than it is to a group.

If you have access to a Target, you might consider the new DnD Essentials starter kit. It has rules for 1 on 1 play. The boxed set also contains a code to get the adventure on here without paying again.
Can’t believe I didn’t think of looking at the DMG for rebuilding encounters lol. Thank you both for the advice! I would do 1on1 1 shots but my wife is really keen on doing one of those two adventures after hearing about the Underdark and Drizzt and she loves vampires and Dracula for CoS she thinks looks relatable and fun.
And yes when the Essentials Kit comes out later this month I will be picking it up the day it comes out, my wife and I are looking forward to that one!
