If you're just going by the book and the players are primarily trying to get to a specific destination (Camp Righteous for example), they can easily travel more than 15 hexes in a three hour period. We had about 6 encounters during that time and most of them were avoidable or quickly dispatched. It all depends on the encounters and level of roleplaying the players want to have, I think.
You could easily spend more than three hours preparing for the trek into the jungle though. :D My players decided to take ten days of downtime before striking out.
