So I don’t know an easy way for manual rolling of hit points to track. If say a lvl8 character and they roll and accidentally delete the hit points in the box there is not a way to track the hit points well. This is especially hard when your players have multiclassed, unless I am missing something which is completely possible.
What’s the best/easiest way to add to the hit points when leveling?
There's no HP history log, though I know it's been requested and so may be planned for in the distant future. Best recommendation at the moment is to log it in the notes under 'other' every time you level up.
Why would a log also be needed? If it's a fear of cheating - then just do DM supervised hp rolling and the DM stores the results in a google sheet or something.

Because some of us don’t always remember if we rolled when we leveled up. Or, we do the math wrong or make a typo and don’t remember what the “original” number was)

Use the DND Beyond Character Builder to manage your character

I used a X instead of triangle.
At 2nd level

But 1E had monsters which would take levels and hit points away.
