Main: Would a Fallen Assimar's Necrotic Shroud work well mechanically with the Gunslinger subclass of Fighter? Of course, the Fallen Assimar would have 'custom origin' turned on (switching the Strength bonus to Dexterity). I really want to create a gunslinger with the nickname of "Death".
Final: What caster class would you recommend dipping into for 1-3 levels to get the whole "Death" the Gunman vibe across? I was thinking either Death Domain Cleric, Shadow Magic Sorcerer, or Warlock (suggest patron type).
Thank you in advance for your time, consideration, and help! :-)
I don't know what you mean by "Backfire" I know in the gunslinger class there is a misfire thing associated wit hit but that is a critical role thing and is not official within DND weapons and equipment. I believe as a part of the gunslinger you are assumed to use weapons with a misfire score as a part of the class. That being said, artificer has the potential for guns without misfire and spellcasting that could very easily be "death" themed. Something like a weapon monger. Necrotic shroud would work with that since it says that you deal extra damage when you hit with an attack or spell it doesn't specify a melee for either.
Within the Gunslinger class it very clearly defines the additional weapon properties like Misfire and its mechanic within the game as well as the weapons' that you are able to use as a part of that class. It gives a table of weapons that are available to you and I presume it works like with the arcane archer where you only gain the benefits of your gunslinger abilities with those specific weapons and no other weapons'. So, no antimatter rifle unfortunately.
The necrotic damage portion of Necrotic Shroud works with ranged attacks. Yes, you could shoot Death at people.
Backfire, or "Misfire" to use the proper term, is a mechanic specific to Exandrian firearms. The Antimatter Rifle is not an Exandrian firearm and thus doesn't have a Misfire score. Also, you will never ever in your entire life find an Antimatter Rifle so I'd plan around a different gun.
Mechanically, none of those classes mesh even slightly with the Gunslinger fighter. If you want spooky-gloomy aesthetics, the Fallen aasimar itself should do the trick. if you're specifically looking for mechanical power, perhaps two to three levels of War Cleric. War gives you the ability to Guided Strike with your Channel Divinity, gaining a flat +10 to one gunshot. Sounds like a "Hissatsu"-type move to me. The third levels gives you permanent access to Magic Weapon. Gunslingers tend to suffer from a severe lack of magical guns, and thus magical damage - being able to make your mundane gun magical lets you pierce mundane resistances. Very Death Gun sort of thing. Plus, War Cleric lets you shoot as a bonus action a handful of times per long rest and also grants permanent Spiritual Weapon to give you a possible defense against close-quarters melee combatants.

What if my PC was given the Antimatter Rifle by a "god"? And they called it a "Necrotic Cannon".

Did your DM give approval for you to have it or give it to your character?

I love creating tons of "spare characters". Keeping all of them for the day that I have a DM/"fitting campaign setting" that they would be approved for.
I can't readily imagine a competent DM who will simply hand you a weapon whose basic attack allows you to deal the same damage, on average, as a Fireball. Especially on a character which can eventually learn to make up to four attacks in a turn. Any DM that allows you to roll 24d8 necrotic damage in a single turn is a DM who is probably running their very first game and got bamboozled into allowing a Shiny that they very well shouldn't have.
Besides. Even if the DM does let you have the gun, how do you intend to supply Antimatter Space Ammo for it?
