Am I allowed to stream DnDBeyond content on Twitch or make YouTube videos? Such as character creation, homebrewing items/classes, or how to set up encounters from the books. Like would I be flagged for streaming the site in any way?

Given that other people do it, it's fine. As long as you're not using their logos and brand as your own or in your thumbnails, all good.
It's covered under Fair Use.
