Just like the title says, I'm running sunless citadel as a level 3 adventure and am wondering if anyone's ever done this before, and if so, do you have any tips for scaling things up to the proper difficulty?
It's not difficult to scale the mobs. I have the sunless citadel in my rotation. It's been scaled for different levels. Just go to the home brew monsters on this website and find proper mobs for the adventure. Every adventure can be scaled to the player levels. Just takes time to find the mobs and update your notes.
The conclusion can be a brutal and long fight. I placed some ruined walls to create a chokepoint then had the villain cast entangle right on it. Sir Braford can melee anyone that gets through and the mage can pick off anybody that’s stuck in place or help Sir Braford . Plus the Druid can duck behind the cover of the tree to heal himself which drags it out. It’s a fun fight and a nice challenge to the party.
You could just swap all the goblins for hobgoblins, twig blights for vine and needle blights, giant rats for swarms of rats, and just double the kobolds hit points and damage. All the monsters are of similar type to the originals, just slightly harder versions. Hope this helps!

That's actually almost exactly what I did. I tripled the Kobold's HP and raised their AC to 14, and I gave them multiattack (without actually raising their attack, so they still hit like 1/8 CR but more and for longer).
I've only done the first level so far for this session, but when the goblins come into the mix I'm just gonna make them hobgoblins.

Get the bugbears and hounds more involved too. Maybe something comes from the underdark passages....
