The Adventurers League Players Guide says, "Whether your character is a cleric or not, if they worship a deity, you may choose only from those deities listed in the Deities of the Forgotten Realms and Nonhuman Deities tables in the Player’s Handbook or any of the deities listed in any of the resources listed in Step 1& 2, above. Note, however, if the deity doesn’t include suggested domains in the resource in which it is found, only the Life domain is available."
I scoured Volo's and couldn't find any mention of domains for the Yuan-ti gods. I know that the life domain is available to every god in PHB+1, but it bothers me that the life domain is the only one available to the Yuan-ti gods given how devoted to cannibalism and human sacrifice they are.
Did I miss the recommended domains, is this an oversight, or is everything as intended?
Yuan-ti Purebloods might worship gods of the classic Realms pantheon, if they go astray from their own gods. Otherwise, you need to look at the Monster Manual for the religious info. There are really only 3 gods: Dendar, the Night Serpent; Merrshaulk, Master of the Pit; Sseth, the Sibilant Death. These all are pretty much death, suffering, and fear type "deities".

I'm going to assume you were trying to tooltip yuan-ti.
No, Volo's Guide has a far more detailed section on yuan-ti, including a far more detailed section on yuan-ti gods. They tend to worship Merrshaulk, Sseth, and Dendar.

Caught me mid-edit. Actually, VGTM and the MM entry have basically the same information. See my edited post.
I would assign the following domains to the deities below:
Dendar the Night Serpent: Death, Trickery
Merrshaulk, Master of the Pit: Death, Nature, Tempest
Sseth: Nature, Trickery, War

Devious serpent folk devoid of compassion, yuan-ti manipulate other creatures by arousing their doubts, evoking their fears, and elevating and crushing their hopes. From remote temples in jungles, swamps, and deserts, the yuan-ti plot to supplant and dominate all other races and to make themselves gods.

The Yuan-ti pantheon is an interesting situation. They're "gods", but sort of in the realm of pretender gods. If you read the Warlock Pact description for Great Old One, it includes Dendar as an explicit example. They've always struck me as powerful beings, but a tier bellow full deities.
The rules for Dieties in Adventurers League have changed since this was originally posted 5 years ago. The current players guide for the Forgotten Realms campaign says the following:
"Deity:You may choose any deity to worship fromofficial rulebooks that is unique to the ForgottenRealms or is not unique to another world.Clerics mustchoose a deity."
So there are no real limits as long as the character chooses an officially published diety.
As far as domain goes, the character can choose any domain available in the campaign specific sources. The character is not constrained by the most likely domains suggested for a particular diety. Keep in mind that Death domain is not available in AL (without a certificate) since it is in the DMG and the DMG is not a valid source for making AL characters.

I'd tend to assume it to be an oversight, but that's probably at least in part because I'm more than a bit prejudiced against AL.

The silibant death doesn't get the death domain?
If I may suggest, including the new domains since this question was asked:
Dendar: Knowledge, Grave, Twilight (you could HB a Darkness Domain, or pick one of the many Night and Darkness domains on DnDBeyond)
Merrshaulk: War, Death, and maybe Tempest or Forge
Sseth: Trickery, War, Death as Sseth may or may not be Merrshaulk it makes since they share domains
