I have a player who is playing as a sorcerer. I gave them a magic item that adds several spells to their spells known list above the max. Right now it shows as at will at the lowest level it can be cast. Im fine with them needing to manually click the spell slot and the damage roll but is there anyways to have it so that the spell appears at higher levels as well so they can just click the damage roll button on a hit?
No. Magic items don’t actually add spells to characters. The magic items hold the spells and the characters just cast the spells from the items. The only way to do it currently would be to add a class feature to a homebrewed version of their subclass (or a racial trait to a homebrewed version of their race).
