I am currently working on a subrace that has the Bugbear's Surprise Attack feature, but I haven't yet figured out how to add the modifier for the extra attack damage when surprising an enemy. Am I missing something? Is there even a modifier for that?

That's fairly specific, so there's no modifier for something like that - just make sure to describe the feature in the text field for it. If you wish for it to display on the actions of the character sheet, then you can add an action for it.
