I have added a homebrew background to my character that has the Mending and Prestidigitation cantrips added in the spell list. I'd like these to be made available at lvl 1 for my fighter, however, I do not see how to add them to the character sheet. Is my only option to add a custom object to the Action list until the fighter reaches Lvl 3 and only if it is Eldritch Knight that I choose as an archetype?

By RAW backgrounds do not add spells and the builders are made with this in mind. If you want to give your character spells you can create a Feat and add this to the character (you can add feats ad-hoc outside the normal ASi/Feat rules on the character sheet by going to features and traits tab, clicking feats then manage feats). It is worth noting that spells added through feats cannot use spell slots, you will need another way to track the usage if intended to add to a class spellcasting feature or mark of the slots manually.

I appreciate the explanation. I'll discuss further with my DM. I was trying to use an optional background feature for a homebrew background. Can you explain then the 'Additional Spells' block within the Edit Background menu - Basic Information.
I think the feats will suffice for now, or just a custom action as these are both cantrips that are added and no need to track spell slots.
Easiest would be a homebrew feat. Copy the magic initiate wizard feat. Delete the level 1 spell and specify the 2 cantrips . Then add the homebrew feat and you are golden.
The homebrew tools allow users much more flexibility than the standard rules and optional rules allow.
A DM may decide that, for their campaign, it is suitable to have backgrounds that grant spells, or ability bonuses - that's up to the group to decide how they wish to play.

The additional spells part of backgrounds get added to the spell list of whatever spellcasting class they take.
For example, a wizard can't normally learn cure wounds, but if they have a custom background with it in the additional spell list, they can learn it (it is not learned automatically, it must be learned and/or prepared acourding to the rules of whatever class they took).
