I'm new to dndbeyond, and I'm trying to make a Subclass for Sorcerers, but I'm having trouble figuring out how to do stuff and what all the different things mean in Homebrew Creation. Please help. :S
I'm having trouble with the spells. I don't know how to make a list of optional spells, and I don't know how to make extra spells that are always prepared. There's just a lot of things and I don't know what most of them mean.
Well, the answers to those questions all depend on what your base class is.
Sorcerers don’t “prepare” spells, so they never get an “always prepared” list like Clerics, Druids, or Paladins do. They either “know” the spell or they don’t, and they can only “know” a set number of spells based on their level. So, for those you would need to add them individually using “add spells.” Make sure to set them to “counts as known” as “no” so it doesn’t eat into their number of spells they can learn. And set “consumes spell slot” to “yes” if you want them to spend spell slots to cast them like normal.
For your list of “optional spells,” do you mean like the normal sorcerer spells they get to choose from, do you mean like the “optional additional spells” like from Tasha’s Cauldron, or do you mean something different where they get another separate list of spells and get to chose some of those in add to their normal sorcerer spells and the extra spells I mentioned in the last paragraph? I need more information.
I think either "optional additional spells like from Tasha’s Cauldron", or "another separate list of spells and get to chose some of those in addition to their normal sorcerer spells" is what I mean, but I'm not sure what the difference is.

In Tasha’s Cauldron of everything, they had optional class features and one of them for Sorcerers added spells to the sorcerer spell list. So, you could just add spells to the regular list of spells from which the Sorcerer can learn.

The Sorcerer subclasses from Tasha’s have these extra lists of spells that are in addition to their normal spell list (kindasorta like their version of “always prepared” spells), but they can replace the spells when they level up with other spells from the sorcerer spell list. They are subclass specific lists, but the player can change the list.
”Another separate list of spells and they get to choose”
Give them another small list of spells from which they can choose, and give them their own second pool of known spells just for that list. So they would get to choose these like their normal spell list, but they would be a separate mini spell lists, and a separate mini pool of spells known.
1: You learn additional spells when you reach certain levels in this class, as shown on the (insert word here) Spells table. The spell counts as a sorcerer spell for you, but it doesn’t count against the number of sorcerer spells you know. These spells can’t be replaced when you gain a level in this class.
2: At 1st level, your (something or other) allows you to learn spells a Sorcerer can't usually learn, listed below. When your Spellcasting feature lets you learn or replace a sorcerer spell of 1st level or higher, you can choose the new spell from this spell list or the sorcerer spell list. You must otherwise obey all the restrictions for selecting the spell, and it becomes a sorcerer spell for you.
In addition, choose a first-level spell from the following list. It is a sorcerer spell for you, but it doesn’t count against your number of sorcerer spells known. If you later replace this spell, you must replace it with a spell from this list.
But unfortunately I don't know anything about making subclass stuff. I made a race once, but subclasses seem a lot more complicated. And how does "Level Scaling" work?
Level scaling works differently based on where and what exactly you are scaling. If it’s a class feature it works one way, if it’s an action it works another way.
To do what you want, it really isn’t very hard to do.
For the first one on your list, create a class feature called [Origin] Spells. There, go to the “spells” section, hit the blue ➕, and then hit “add spell.” In the “spell” field, put the name of one of those spells, under “ability score” put “Cha,” for “counts as known” put “no,” under “consumes spell slot” put “yes.” For “available at caster level” put whatever level is appropriate for that spell. SAVE. Do that for each spell. Then, under the Description and snippet fields put:
“You learn additional spells when you reach certain levels in this class, as shown on the (insert word here) Spells table. These spells count as a sorcerer spells for you, but do not count against the number of sorcerer spells you know.” Then, go copy a table from another subclass, pass it into the description under what you wrote, swap out the spells on that table for the ones on your table, and voila. SAVE.
For the second feature in the list, create a class feature for that level and all the way at the bottom you will see a section named “Additional Spell List.” Hit that blue ➕ again and then hit “add” and name this spell list “Additional [Origin] Spells” and add all of the spells here all at once. Then, under the “Spells” section hit “add spell” and put all of those exact same spells all together into the the “spell” field. For “ability score” put “Cha,” for “counts as known” put “no,” under “consumes spell slot” put “yes.” Under “level divisor” put “2.” (That all should only give them a single dropdown for that class feature, and only let them choose one of the spell from that limited list. If I remember correctly, the Level Divisor should only show them spells of the appropriate level in the dropdown, but I might be misremembering that.) SAVE. Then, for the description field put the following:
“At 1st level, your sorcerous origin allows you to learn spells from an expanded list. When your Spellcasting feature lets you learn or replace a sorcerer spell of 1st level or higher, you can choose the new spell from the regular sorcerer spell list, or from the Additional [Origin] Spell List bellow. Spells you learn must be of a level for which you have spell slots, and they count as sorcerer spells for you.
In addition, choose a first-level spell from the Additional [Origin] Spell List. It is a sorcerer spell for you, but it doesn’t count against your number of sorcerer spells known. If you later replace this spell, you must replace it with a spell from that list.”
Slap another table under that one just like before, and put an abridged version of that text in the Snippet field. SAVE.
