"Brix, drink this", the thief says, as he thrusts a Potion of Superior Healing into the goblin's hands. Turning, he runs to the pillar on the left side of the room, hoping that the 'thing' would still be concentrating on the group.

Move to M2, Hide as action, give Brix a potion as free action
Fire resistance applies if you're completely submerged; I assumed Flynt and Celric were just dunking their heads so they could breathe. Celric has racial resistance anyway, so it only makes a difference for Flynt (but Flynt, if you would have been actually underwater then go ahead and halve the damage).
Something in Shale's head pops again. "Whoa there. That's was uncalled for. I was... trying to help you get this thing back?" The genasi says rubbing the base of his skull. "Since you seem to be the cause of this undead trouble I suppose we can't be having that."
The cleric slides into the pool next to Celric (U10) and reaches out a hand. "I hope this helps your condition too. It helped clear up my upset stomach." A wave of restorative energy comes to the dragonborn. Then Shale takes a breath before fully submerging
You know that mind-flayers tend to be better than most at resisting the effects of many kinds of hostile magic. You also know that they can emit blasts of psychic energy that both does damage and can stun those with weaker intellects. They also like to eat the brains of their victims, which they will sometimes do while the victim is still alive (and merely unconscious).
Garden variety mind-flayers don't have immunities or resistances to particular elements or damage types. Though this doesn't look like a garden variety mind-flayer to you, so hard to say if that holds true here.
"Best to stay at range for this one, too!" Jarl calls out. "Mindflayers find brains particularly delicious, where they decide not to control you instead." He uses his Symbiotic Entity wild shape to awaken his spores, giving himself 44 extra (temp) hp. He's going to move to the right, to V18.
Does the dry, cracked skin on the mindflayer mean anything?
Squiggles casts False Life at 4th level. He also sens a mental message to Fluffy to keep exploring so the water layout is understood. Scanning the ceiling, Squiggles looks for his foe
Btw, you all know where the enemy is, having heard the verbal component of the spell and seen the bead come down from A13. You're just too far away (except for Jarl) to see it based on the range of your darkvision.
"Sweet Baravar Cloakshadow, did you say Mindflayer Jarl? Can we try not fully destroy it? Can you imagine what kind of arcana we could unlock from this thing?"
Distance-wise, the creature is 60' up, so anywhere in row M or above is within 60' of it (add 5' for each row below M).

Jarl’s going to use his reaction to cast Absorb Elements to halve that damage to 11.
Also, do those who are in the water have resistance?
What abilities/strengths/resistances/immunities does Jarl know about mindflayers?

Go ahead and make a nature check.

Flynt would have been swimming around and been underwater to continue breathing.
I have an intelligence of six, I know what I'm doing.

Celric, as Shale touches you, you find that your lungs are starting to fill with water: you are no longer able to breathe while submerged.

Jarl:
You can make either an arcana check or a history check
Squiggles:
You can make a history check if you'd like, to see what you might know about mind-flayers

From what you know of mind-flayers, they don't typically use arcane magic, relying instead on their innate psionic abilities.

“He’s not coming. We have do it on our blubblubblub” Celric emerges from the water. “Thank you brother.”
He then stands. Takes the rest of his normal movement toward the monster (q13?) and casts spirit guardians at level 4

You're not sure what the dry, cracked skin means, but you do know it's not normal for a mind-flayer.
