I wanted to see what my ac would be if I used armor of shadows but even though it's at will I can't seem to use it. I'm not wearing any armor and no matter what I do I can't seem to use it.
The character sheet doesn't apply temporary effects, which Mage Armor (Armor of Shadows) is.
You can create a magic item to apply the effects or just directly edit your AC.
I made a video going over how to edit and customise the sheet for a variety of temporary effects. Here it is starting at a bit for AC.

Simplest way I can think of to toggle it in your sheet would be to create a homebrew item using Studded Leather +1 as a template, since the AC formula is the same. Name it "Armor Of Shadows", set the weight to zero, and then you can "equip" it when you cast the spell and your AC will adjust accordingly(making sure you have any other armor unequipped). The only hiccup that immediately comes to mind is if you also had Bracers Of Defense, since the sheet might see you wearing "armor" and not activate the effect of the Bracers. I'm not an expert on the homebrew system on here, so there may be a way to make it work w/ Bracers too.

The item can have a Modifier of Set Unarmored Armor class 3 (the game assumes base 10).
That should work with all features, including other unarmored AC features like a barbarian, monk etc. etc.
But yeah, just studded +1 with weight 0 and Grant proficiency with Light Armors also works just as well 90% of the time.
