Now if you cast polymorph on a monstrosity, and than use awaken on it's polymorph form .the beast will be able to understand a language you know.
Now if that creature changes back does the magical effect of their intelligence increasing to 10 stay with them.
I know the other part of the spell will not hold because it does say that the Beast or plant will be Charmed by you for 30 days after he comes unpolymorphed it would be no longer Beast or plant.

4. You dispel the transformation (which seems like it would also dispel the awaken spell).
5. The Ankheg's original (true) mental scores replace that of its transformed scores. Your ankheg now has an intelligence of 1 again.
that would be true if all spell and conditions were dispelled with polymorph end. but that's not the case. conditions, and effects are transferred over. unless your new form does not met the requirements of the spell. if your unconscious in your natural form and you are polymorphed you still down. or if you have been charmed PERSON cast on you and your changed into a beast by the spells wording your no longer charmed, and other effect like poison/stunned transfer to the new form.
no what im getting at is the loose wording in the spell. because it does not say the beast intelligent go to 10 but the Targets go's to 10

The very first sentence specifies a Huge or smaller beast or plant. The following sentences should be understood in that context; any references to "the target" are just talking about the beast or plant you touched.
Awaken is Instantaneous, so it's not an "ongoing effect". It changes the target's intelligence score. So does reverting from Polymorph. If Awaken had a duration other than Instantaneous, an argument could be made that it still affected the target after reverting from Polymorph, although if the original creature were a monstrosity, it would not be eligible for Awaken, so the spell would end.

1: Awaken specifically says "AFTER spending the casting time". Well, the casting time is 8 hours. This means you do not have to touch your "huge or smaller beast or plant" immediately. After means after, so any moment in time after the casting u can decide to transfer the magic into your target, be it 1 second after or 100 years after. This means it would absolutely work with polymorph. Cast Awaken, hold off on delivering the magic to the target. Cast Polymorph on ur target, then deliver the magic.
2: Polymorph specifies that at the time of the transformation your mental ability scores are replaced and THAT transformation lasts the duration of the spell. This means anything done to the ability scores AFTER the initial transformation, be it positive or negative, will NOT end upon polymorph ending. Modifications to the mental ability scores are not mentioned here and thus, AS WRITTEN, do not revert upon changing back. In fact in the next paragraph Polymorph specifies additional things that happen upon the spell ending. NONE of them mention changes reverting back that were done AFTER the transformation.
Words are important here. We can deduce a lot from them. Including the fact that, as written, you could polymorph any "creature that you can see" into whatever a beast and awaken it. The intelligence bump WILL remain after polymorph drops, as thats how its worded. Is that how its intended? Who knows, its 2025 now and I havent seen anything from WOTC or Crawford etc on this but its a fun thought.
Awaken modifies the Intelligence of the assumed Beast Form, all ability scores revert when the form ends, irrelevant of if something like the the Awaken spell were cast on them. So no, an awaken spell cast in this way would not persist past the end of Polymorph as it was the assumed form's ability score that was modified, not the creature's base/original ability score. However, this said, the charmed condition would persist (except if the base form is immune to charm), since that is a condition and that is irrelevant of the form.
