I'd say Powerful Build refers to your Goliath base size, not the one you could have by other means (e.g. Large Form, Enlarge/Reduce or a Magic Item)
See next reply. It's true the wording allows the interaction, so Powerful Build would be affected by changes to your size from other sources (e.g. Large Form, Enlarge/Reduce, a Magic Item, etc.)
I would think they would stack. Powerful build says you “count as one size larger” not, “you count as a large creature.” So for those 10 minutes when you are large, you would have the carrying capacity of a huge creature. I’d also let it stack with other similar powers, rune knight, giants barbarian, or whatever else.
It would allow for a pretty cool out of combat use to hulk out to large size and now you can move the boulder out of the way. Gives the power more interesting flexibility.

Powerful Build says that "You also count as one size larger when determining your carrying capacity." You already acknowledged that when in Large Form, the Goliath retains the "Advantage on any ability check you make to end the Grappled condition", so now let's look at the other half.
Large Form changes your size to Large. It does not say anything about Powerful Build or Carrying Capacity. Powerful Build says that "You also count as one size larger when determining your carrying capacity." What is one size larger than Large? It's Huge.
Okay, rules as written, while in Large form, the Goliath counts as a Huge Creature for the purposes of determining carrying capacity. This effectively doubles the Goliath's Carrying Capacity whether Large Form is active or not.
So, please, enlighten me, what is so "powergaming" about double Carry Capacity? Where's the exploit that needs to be closed up?
In regard to Carrying Capacity, note that Giant Form only lasts for 10 minutes, making it tough to take advantage of the increased carrying capacity for long term hauling purposes.

When my goliath uses large form to increase their size does powerful build change with that so that I now count as huge for carrying checks etc.
