I just recieved a Cloak of Invisibility on my character and I was wondering a bit more on how it works. I know it lasts 2 hours total with increments of 1 minute for its' usage. What I am curious about is how does this invisibility act when I attack or cast spells. Am I temporarily visible after attacking or do I only turn visible when the hood is off alternatively when the cloak has no more time left in it?

A rule of thumb in 5th edition rules (in my experience) has been "if it doesn't mention it, it doesn't imply it."
The spell Invisibility mentions it breaks when you do hostile actions. Compare and contrast with Greater Invisibility, which is almost an identical wording, but doesn't include the premature end clause.
So, to fully answer your question, the invisibility of the Cloak of Invisibility doesn't go away in the same way the 2nd level spell's does. It doesn't go away unless its duration (the total of 2 hours) lapses, or you lower the hood.
Keep in mind the differences between being Invisible and hidden, however. :)

Because only magic items from the SRD or Basic rules are found on this site currently, and being in the DMG doesn't guarantee being in either of those two sources.
You become visible when you cease wearing the hood.
Unless some external force acts that removes visibility or negates magic, then this is the only factor mentioned that removes the invisibility (well, that and the duration).
This does indeed mean you can take offensive actions and remain invisible.

Does it recharge duration each day?
The only way it stops making you invisible is by lowering the hood. Or an anti-magic field.
