Hello there! I was wondering, as I am thinking of making a Mounted Attack ranger, What are the rules for mounting creatures? Not mounted combat, but things like ‘What can I mount?’, and any limitations. If you find something, please link it. Thank you!

Yes, it still does, as the size is related to the anatomy of the mount: the mount has to be large/broad enough to physically accommodate the rider. Carrying capacity is only related to the Lifting and Carrying rules, which are separate from the mount rules, unless your DM wants to make an exception.
Consider that any creature can "carry" another creature, which is only subject to encumbrance; there is nothing wrong with a mule carrying a human, or even with a strong human carrying a halfling. Acting as a "mount" is separate, and among other things involves carrying another creature effectively in combat without being slowed or otherwise inhibited.
Humans can't ride horses because they're also medium. I thought the rules were if they were the same size or larger but I checked and I was wrong about that. Maybe the "and" in the mount rules was supposed to be and "or." I think that would make sense.

You can mount anything larger than you or a giant sea horse, a griffon, a pegasus, a peryton, a dire wolf, a rhinoceros, a saber-toothed tiger, a warhorse, a pony, a camel, a donkey or mule, an elk, or a mastiff. These are all the confirmed mounts I know of. This is coming from examples in the PHB mounts section along with the find steed and find greater steed spell.

Pony's are medium sized. A medium sized humanoid cannot effectively ride a pony. You would have to be the size of a small sized humanoid such as a child or a hobbit to effectively ride a pony into battle.
