So I'm not really that new to D&D, but I am to multi-classing. I have another class would I chose from the skill the other class is giving me. Ex: Ranger I chose for Animal Handling and Nature. And For Cleric I want Medicine and Investigation.
When you look at the multiclass option in the PHB (pg 163-165) there are tables that give you lists of what you gain from the new class.
First you must have the requisite Attribute scores, assuming you're starting as Ranger, you'd have to make sure you have a Wisdom score of 13 in order to multiclass into Cleric. (PHB. 163)
From there you would go to the table on (PHB 164) and you would see that multiclassing into Cleric would grant you: Proficiency in Light Armor, Medium Armor and Shields. You wouldn't gain any skills, weapons, languages, etc.
Lastly you would look on (PHB 165) the Spell Slot table to see if/how your spell slots change with the acquisition of the new class.
---
From a quick glance you're probably going to be better off starting off with Ranger, grab Investigation, Nature and Medicine, then choose Folk Hero Background to give you the Animal Handling and Survival skills to give you all the ones you're looking for. Otherwise you could choose Hermit and get Medicine from that background and grabbing Animal Handling at creation.
When you gain a new class, you get fewer proficiencies than your starting class. If you do get a skill proficiency from your new class, you choose from that class's skills.
You only get the listed proficiencies once, when you're a 1st-level character. There's a separate table that shows what you get when you multiclass into a class (and by the way, rangers get three skills at 1st level, not two. It's a common mistake).

Do I just chose from one class or both?
Nobody else has touched on this and I wasn't sure from your post if you already knew this or not, but you can't multiclass in 5e until 2nd level. If you already knew disregard. The way that you were asking if you took some skills from one and some from the other made me think that you might not have caught that.
Also, keep in mind that you need the minimum stat requirements for each class. Ranger is one of three that requires two different stats to be at least 13 (dexterity and wisdom). Since Cleric only requires wisdom, that double requirement ends up just being a dexterity requirement for your purposes.
Finally, just in case I'm not reading into your post more than you're actually saying, if your current class is something other than ranger or cleric, you would only be able to multiclass once per level gained (ie. Paladin at level 1, ranger 1 at level 2, and cleric 1 at level 3). This particular build would only be a level 1 caster, and you would have to have Strength, Dexterity, Wisdom, and Charisma at least to 13 in order to do so (part of the reason that paladin/ranger builds are not often talked about.)
Not to hijack the thread, but it is a related matter and I can't find the answer anywhere.
When multiclassing into Bloodhunter, what Proficiencies (if any) are gained?
Since it's Critical Role content, it won't be in the PHB (and as such, is missing from the table linked in prior posts). Looking at the table, though, against what a level 1 Bloodhunter would get, I'm assuming it would include Martial Weapons and probably Shields.
Looking at the bloodhunter information page (?) at the bottom shows stat requirements of Strength/Dex and wisdom 13.
Proficiencies gained would be light armor, medium armor, simple weapons, martial weapons, and alchemical supplies
Those are the proficiencies given when you take the class at character level 1. This information does not match up even remotely compared to the standard WotC classes in the multiclassing table in the PHB. No other class gets everything from multiclassing that would be given as primary level 1, and in fact there are 2 classes that get nothing when multiclassing. Hence why I'm asking the question.
I am aware from the Wisdom 13 and Str or Dex 13 required.

It should be in the class description somewhere, that being standard practice for non-PHB classes, but I just looked and didn't find it.

I was just reporting what I found in the document that I had found detailing the class description that had a multiclassing section at the bottom. Since Blood Hunter isn't an official class, it wouldn't surprise me that it wouldn't be like the PHB classes.
However, you are wrongish. Ranger gets light and medium armor, shields, simple and martial weapon, and a third skill proficiency as a level 1 character or as a multiclass (third skill assuming the basic 2 skill proficiency model shared by many classes). The fighter and paladin get everything except heavy armor at multiclass that they get at 1. Since the stat requirement implies that the multiclass rules had been derived by combining fighter and ranger, it would make sense that they might model the proficiencies on them, too.
That said, check your source document for the class description and see if the multiclass options are in it. The artificer has the multiclass information at the bottom.
It appears that for both the Artificer and the Blood Hunter, the multiclassing requirements and gained proficiencies are in the .pdf's but that information was not carried over into the class description on D&D Beyond. However it's possible that the multiclassing mechanics built into the online character sheet do have the appropriate rules for these classes. Try building a character of a different class that doesn't already get the things you'd gain from Blood Hunter or Artificer(Wizard->Artificer and Monk->Blood Hunter, for example), and see if it adds the correct armor/weapon/tool proficiencies.
Tested with Wizard -> Bloodhunter, and it did in fact add everything. Simple and Martial Weapons, Shields, Light and Medium Armor, and Alchemist's Tools. That is still a significant outlier from the other classes, though. Probably should trim a few of those out of there when multi-classing....
This information should also be listed somewhere if the class is going to stay integrated into DDB. Either on the Bloodhunter page, or as a sidebar in the PHB.
