If it is being used one handed, use 1d8+7, if two handed, 1d10+5 for two handed. Except I’m not sure why the +x numbers are different. Unless there’s a feat or class feature involved, they should both be the same.

The Dueling fighting style gives the +2 when wielding it one-handed. That +2 makes it objectively better to swing a versatile weapon with one hand instead of two, your max damage is the same, but both your minimum and average damage are higher.
In this case, wielding it one-handed (1d8+7) seems to be strictly better than wielding it two-handed (1d10+5). A bit more damage (8 to 15 compared to 6 to 15) AND an extra free hand in case you have a reason to use it.

I would assume it’s the dueling fighting style.
