Does Versitile mean the weapon does different damage if thrown like a trident? Thanks!

This weapon can be used with one or two hands. A damage value in parentheses appears with the property--the damage when the weapon is used with two hands to make a melee attack.

Can a versatile weapon (staff of defence) be classed as a light weapon so I can use it as a two weapon attack for my bonus action? Thanks
Light and Versatile are two different properties. A versatile weapon can be used with Two-Weapon Fighting if it is also light - because it's normally one-handed.
Staff of Defense isn't light though - so to use it with Two-Weapon Fighting would require the Dual Wielder feat.

Versatile means that the weapon does more damage when used with both hands in a melee attack.
