They were updated in Ravenloft, which then updated the generic entry but not necessarily any individual wereraven's statistics from Strahd (if there are any). Now of someone can poke WotC to update the other were-animals, I'd be very appreciative.
Refer to the Monster Manual for general rules for lycanthropy and Candle Keep for specific rules for wereraven lycanthropy per Candlekeep Mysteries, Book of the Raven. There is an option for the DM to allow certain character who prove themselves to become a wereraven. In this case, the bar is set rather high.
Okay, hear me out. Wereraven Kenku, does it grow new wings and can fly? I know the dex score would change. How does the transformation work though? Is that an only once per day type deal, whenever the DM says it happens, at will, or, as you probably wouldn't look very different, could you get by always being wereraven form as a Kenku?
I think the mechanics are murky to allow DMs to ramp up or down the ability to match their comfort level and campaign setting. You could design a campaign around a character learning how to control or cure themselves.
If I'm building my own Wereraven form for a PC, I have a few questions. Using the book of Grim Hollow all other Hybrid forms can't cast spells or concentrate on spells. Do you think it would be plausible for a wereraven that can already do mimicry to be able to speak well enough to cast spells?

One thing everyone is forgetting is that there is a difference between natural lycanthropes (those born with lycanthropy) and those afflicted with the lycan curse. A PC infected with lycanthropy is very difficult for both PC and DM. First off y'all are assuming that one afflicted (not born with) can change form at will. PCs infected with lycanthropy aren't able to voluntarily change to/from a lycanthrope at will, until at least two years (of game time) with the disease. Certain stressful situations can also cause involuntary change even when the moon is not full (or day before and after full moon). Examples of this is when PC in human form loses 1/3rd of their HP, 50% chance of involuntarily changing. Wererats may involuntarily change when in complete darkness. I might rule that the sight of carrion might have a % chance that a wereraven PC might involuntarily change. During these involuntary changes they stand there confused for one or two rounds (stunned basically) taking whatever enemy around them deals out.
Oh very important! NOT ALL LYCANTHROPES SHOULD HAVE A HYBRID FORM. For a creature as small as a raven, I would say that there is NOT a hybrid form. So you're pretty much screwed if you want to use this a a PC.

This is because as a were-creature, hybrid or not, these claw/bites are akin to monster attacks and/or attacks with natural weapons. Meaning it is a weapon attack, not an unarmed attack.

Are you referring to the new book for 5.5e in DDB? I don't own that book, but I know some species in different books have traits that let you use parts of your body as unarmed strikes. What's the wording in your case? One example is the Tabaxi, as explained by Thezzaruz here:
Because of your claws, you have a climbing speed of 20 feet. In addition, your claws are natural weapons, which you can use to make unarmed strikes. If you hit with them, you deal slashing damage equal to 1d4 + your Strength modifier, instead of the bludgeoning damage normal for an unarmed strike.

Wereravens /ravens can mimic simple sounds. I would say that they don’t speak well enough to cast spells. Also lycanthropy that is contracted by a humanoid (not a natural born lycanthrope), is similar to a having a form of temporary insanity when they change from human to beast (be it hybrid or full raven). You ever hear about how people some act crazy during the full moon? Anyway, I’ve always played that insane characters are incapable of casting spells because they don’t have the proper mindset.
