There is nothing stating that you have to know, or see, or perceive the casting of the spell. Counterspell only says you attempt to interrupt.
Sage Advice has said that you have to know the spell is being cast in order to counterspell it. If you have no idea a spell is being cast besides metagaming, then you can't counterspell it.

There is nothing that prevents you from not seeing the Flames Skull casting a spell.
However the point of this thread is "Yes you can Counterspell the Shield spell just like you can Counterspell a Counterspell."
