Monks gain extra attack at level 5, so you can throw 2 darts when you take the attack action. Some ranged weapons with the loading property override this and only allow one attack per turn, but darts don't have that property.
You are only limited by the number of darts you have and the number of attacks you can take when you take the attack action.
The dual wielder feat is really geared around melee weapons anyway, there is no benefit in it for attacks with ranged weapons. I would argue that a monk who is firing darts or fighting with fists would have no use from the feat at all.
SO IF I WANT TO THROW 2 DARTS AT LEVEL 5 AS A MONK I WOULD NEED THE DUAL WIELDER FEAT RIGHT?
Yes, you would need the Dual Wielder feat. Darts are not ammunition, they are weapons. You can only draw one weapon as part of an attack as a free item interaction. The act of drawing the second dart would require your action.
The other thing you could potentially do is find some way to gain a Fighting Style to gain the Thrown Weapon Fighting Style from the Class Feature Variants UA. I personally love a 2 level dip into the Variant Ranger from that UA, as it also includes other nice perks as well and plays very nicely with the Monk's preferred Ability scores of Dex, Wis, Con. If your DM does allow you to use the Class Feature Variants, you might want to look into using the variant rules for the Monk from that UA as well since that allows them to designate darts as Monk weapons, which they don't count as normally.

If you are already holding both darts, or holding one dart, you can certainly throw 2 in a turn with extra attack (throw, draw, throw) without having the feat. and given the weight and size, I would certainly allow a monk to hold multiple darts in one hand (they weigh 4 ounces for crying out loud). I find it ludicrous that you could not draw two darts but could draw two arrows, the arrows would both weigh more and require similar movements to draw and knock

20 Arrows weigh 1 pound. 4 Darts weigh 1 pound. That means 1 Dart weighs as much as 5 Arrows. A dart in D&D is not like a dart you throw at a dart board. It’s more like a tiny javelin.
Sposta is correct, throwing darts, daggers, javelins, Handaxes, etc. breaks down very quickly if you don’t have Dual Wielder for any class with Extra Attack. Fighters level 11+ have problems with it that even Dual Wielder can’t solve. A lot of stuff from that UA was unbalanced, but Thrown fighting style was 100% necessary and should be errata’d in ASAP.

I didn’t really find anything in there unbalanced. I don’t want to derail the thread, but I did want to voice an opposing opinion on the subject.
Can still hold a dart in one hand and throw it during 1st round and then draw and throw 2nd dart... in the second round you would only be able to throw 1 dart... unless you did no attacks and used free action to draw a dart and action to draw another (think of it as a reload round)... then in 3rd round can fire 2 darts again.
(edit) during 2nd round can also bonus action dodge (patient defense)

The designers must have never held an arrow if they think they weigh less than one ounce each...I’ll admit i was wrong per RAW, but I still think the rule is stupid...I can understand drawing two 5 pound swords might take your whole action, but not two 4 ounce darts

I'm going to make this way harder than it needs to be.

Round 1: start with two darts MAYBE (otherwise, go directly to round 3+), throw two darts, draw one
Round 2: start with one dart, draw one, throw two darts
Round 3+: start with no dart, draw one, throw one
Thats why Dual Wielder is needed to throw two darts in a round. Because by default, you can only draw one weapon per turn.

The designers must have never done lots of stuff to design D&D the way they did.
