If the infusion ends I would assume the tattoo reverts back to its needle form as if attunement had ended (which it effectively has; you can't be attuned to a magic item that no longer exists.)
I don't believe creating Spellwrought Tattoos is intended however, since the Infuse Items feature describes the items you create as "prototypes of permanent items" and Spellwrought Tattoos are consumables. Also the Replicate Magic Item infusion excludes potions and scrolls, and the Spellwrought Tattoo is basically a spell scroll in tattoo form.
For an artificer with the spellwrought tattoo infusion (a similar question would apply for anyone else who found a needle)...
For a 1st level spell, can you choose *any* spell from any spell list (e.g., hex or goodberry or shield of faith or magic missile), or only one off of the artificer list (or one that you know)? If it is like writing a scroll, it would have to be the latter since you can only write a scroll of a spell you know. That's still not bad - you are effectively using an infusion to give yourself an extra spell slot.
For a cantrip, can you choose *any* cantrip from any spell list, any cantrip from the artificer list, or only one you know? If it was only one you know, that would be pretty pointless since cantrips can be cast at will. One off of the artificer list (or a spell list you know) seems reasonable.

I am confused currently. Not by how the Tattoo's work but by something a friend of mine said. An entire month before Tasha's Cauldron Of Everything came out, my friend used the tattoo's in his campaign. When tasha's came out, there were the tattoos. I emailed him about it and he told me that he submitted the idea of magical tattoos to WOTC and they went with it. He also said that he did not get credit in the book for his idea. I am not really sure whether to believe him or not, but that would explain how he knew about it before the book came out. I am just really confused.
They have been available in Unearthed Arcana for a while now, hence my confusion about the attunement requirements. While I suppose it's possible that your friend created the idea (I have no idea who came up with it), lots of people have known about and been using them for quite a while now.
I think this is not about RAW, its about RAI, I would permit multiple tattoos as 1 attunement. But i would use the overlaping of the tattoos as limits. For example you can have multiple uncommon tattoos, but only a few rare or 1 very rare/legendary, depending on the tattoos size.

Awesome! Utterly, utterly awesome!! I started a thread on Game wrecking: D&D 5e Artificers' infusion of spellwrought tattoos! and, in 5 pages of debate, no one came up with this wonderfully clarifying and most world-saving of interpretations. My highest commendation to you!!

Nothing about the item requires the spell in it to be on a spell list you have access to, nor do you need a slot. It works a lot like one of the DMG wands, where having the item just lets you cast a spell.
