The only restriction on the weapon is you can't attune to a weapon that has the two-handed property.
Other than that, you can attune to any weapon, including throwing weapons, and use your CHA stat for that weapon in all ways that the weapon can be used (melee/thrown).
It looks like Sling is even technically allowed, but doesn't seem like is the sort of thing a Hex Blade Warlock would pick. :)

Even that can be bypassed (short/longbow, light/heavy crossbow) by getting the Improved Pact Weapon Invocation.
You can even use a long sword right? Technically it doesn’t have a the two handed property, just like a staff, it’s not the property, it’s just an option to use it two handed. Not restricted to, right?

Correct. It's explicitly referring to the weapon property, not how the weapon is used. That's the same reason quarterstaves are monk weapons.
Just a shame it’s an action to reform the weapon. Otherwise throwing would be much funner. I like to use it near the end then eldritch blast if it doesn’t finish them.
When I throw my hex pact weapon at a creature, do I roll charisma for the attack?
```When you attack with that
weapon, you can use your Charisma modifier, instead of
Strength or Dexterity, for the attack and damage rolls.```
