I like the third one. During long or short rests you could roll a D6 to figure out which one of them is at the top and taking all the actions. Three charectors in one.
Another fun charector idea is a bipolar palidin that worships an unkown God, but every long rest you roll, and if you fail you go to the other 'side' where this paladin thinks he is that god.
In one game we almost had a character with multiple personalities - there were two players who only came on alternating weeks, so which one showed up was going to control the character. The idea got squelched by one of them leaving their job and becoming available every weekend.
And in a RIFTS game, we had a player who was brand new to the game system and campaign world, and who was also going to be fairly late on the first game. So I talked her into playing a dragon hatchling and the first mission was to steal....well, it was her egg, and the character hatched once the player arrived. Not knowing the campaign was no detriment, as I sold her on the fact that the character was literally born yesterday. Although in truth, she wasn't that old until session 2.
