Its amazing. The adventurers get served their ale by giant tentacles. If they ask what's up with that, the response is "probably cuthulu." The Kraken is trying to pay their medical bills from the last time a dragon wanted to try kraken sushi. Their monsters nature means they can't get more than a service industry job.
I also added an annoying little girl(the shadow) at a sister to the hobgoblin(different race) who dances around and sprout flowers. She is going to be a key person in the adventures.
Celestial Female running the bar. She is disguised as an elf, a very drunk elf moaning over being love at first sight with the girl that runs the local orphanage.
The girl that runs the local orphanage is NOT a girl - she is secretly a succubus! feeding on the innocent dreams of her charges.
If the Celestial finds out - "So what if she is a succubus, we surely can make it work it out right?"
I have a dwarf as an innkeeper, whose inn is an ancient magical structure which is imbued with a powerful protective charm which renders its owner effectively invincible - knives snap, knuckles break, and so forth, provided he is inside the inn. So if someone is getting into a fight, he can break it up without any difficulty. It also makes him impossible to intimidate! He doesn't advertise the fact, and locals keenly watch if out-of-towners decide to try an pick a fight with him!

I would say a Storm Giant because of how big they are. Being stubborn is a personality trait.

Warforged, I'd say.
They'd always be working...always behind the counter.
Even if they go into their "Sentry's Rest" state, they'd still be just standing there...accomodatingly!
