How do you restrain a Doppleganger, once you know it’s true Form? Is there a way to “hold” it in some way and MAKE it stay in it’s true form? A potion? A spell? Any help appreciated
As I see it the Doppleganger's ability to shapechange is not a magical one in the same sense as casting polymorph. Instead it's a racial/special ability that is just part of the Doppleganger. To this effect the only real way to stop it from changing is to knock it unconscious or kill it. I'm making this judgement based off of older editions where the effect was considered "supernatural" as opposed to magical and the last line of the Shapechange ability saying it reverts to it's true form if it dies.
Can't think of any official items, but if I was running a game where my players were tasked with finding a doppelganger, I would absolutely allow a homebrew item similar to the Dimensional Shackles, but instead of preventing travel they would prevent shape changing. (Provided they could find someone to make them)

Bindings of True Form Rare Magical Item
These magical shackles are made of magically contained mercury. When the bindings are placed on a creature any form of Shapechange, Polymorph, Alter self, or similar spells and effects are nullified. The Bindings of True Form are immune to any damage from non-magical sources. A creature must beat a Strength (Athletics) DC of 30 to escape the bindings.

Moonbeam can force them to transform back to their true form. A carefully-worded Suggestion could force them to transform too.
After that, there's no easy, long-lasting solution other than keeping them incapacitated somehow. The simplest way would be to knock them out.
