We are about to finish our Curse of Strahd campaign and it´s been quite a ride. We´ve spent more than a year playing and we´ve grown attached to Barovia and Ravenloft in general. For our last session I wanted to give my players a little gift, nothing too fancy. A small detail to conmemorate our adventures. We live very far apart so it can only be a digital purchase.
I was thinking about something to customize their character sheet in Beyond (is there an option like that?), or maybe a set of digital dice but I haven´t decided yet.
To your question about dnd beyond customization, I don't believe the sheet things are for sale (pre order and now subscriber bonus). They made a big deal about book gifting, but I don't know if that extends to digital dice.
Not sure your budget, but places like heroforge have gift cards if you want to get them physical minis (that they can order themselves if address sharing is a concern)

Buy them each a ddb subclass/lineage/monster (their preference) from Van Richten's when it's out. Ravenlofty + nostalgic
Also, it's really sweet you'd give your players gifts.
