Eyo, I wanna buy the Harengon species for my character but like. It's not there, I can only buy the entire expansion and it's always let me buy what I needed separately on other expansions. Little help?

Go to the marketplace page for Mordenkainen Presents: Monsters of the Multiverse, and scroll almost all the way down until you get to the lost of individual purchase options for races. You can either buy all the races for $9.99 or just the Harengon for $1.99.
NB: Whatever you spend on these options will discount the purchase of the entire book. So if you spend $1.99 on the Harengon, ans you decide later that you'll buy the whole book, it will only cost you $28.00 at that point (assuming no price rises). However, this does not work for the group purchases, so if you buy just the Harengon now, but later decide you want all the races (but not the book), there'll be no discount. As such, if you're not a DM (and therefore don't want the entire book, just the races), you're best off just getting all the races now for $9.99. If you are a DM or will want all of it eventually anyway, then it doesn't matter too much.

$1.99 for the race in MotM scroll to almost the bottom of the page, and it is in the right column as an individual purchase option, not sure on pricing out of my country.
You may need to go to the website for the ala cart options due to app store fees it may not be profitable to sell items for a couple of dollars through the app store as a middleman, and purchases through the app have been known to have delays in content being available due to payment processing, confirmation from the app store used and letting DDB know you made the purchase..., purchases made on the website give DDB this information almost instantly and less fees for the sale as there are less hands in the cookie jar.

I already own the Humblewood campaign in hardcover (and highly recommend it) so I'm just looking to buy race/class options here on dndbeyond. None of the other 3PP releases have been made available for piecemeal purchase options. I think that's going to be a trend for the time being for 3PP books.
Doubtful. Sales are more complicated with 3rd Party Products and less profitable on a purchase by purchase basis, since part of the profits has to go to WotC and a part to the 3PP. Therefore, it's likely they're not doing it in order to encourage large purchases which are more profitable.
There's also an element of doubt as to whether they're even continuing the piecemeal purchases. All the latest releases (albeit all but one are 3PP) have not had the options - including Book of Many Things, a WotC product. It's possible that's all just a coincidence - some of the BoMT options presumably wouldn't translate well a to digital-only medium, but some should have worked - but it's possible that they're not doing them anymore. The communication that followed only spoke about previous works.

The best part is, and by best, I mean scummy, is if you did say for example purchase the Harengon race before, and now wanted to buy the rest of the book, they will charge you for that Harengon race again. Surprise!!
Actually-this is where homebrew comes into play….until they disable the ability to use your own homebrew that are similar to official content (like the similarity rule for publishing homebrew).
