I don't know exactly, but I know there are a number of Giants and Dragons that have not been updated to 5e in any official way. I am sure there are dozens of Celestials and Fiends as well.
If you get the AD&D MM and all of the Compendiums then you’ll see tons of stuff not updated to 5e. That’s just one edition.

Well, off the top of my head I know that the Tome Guardian as featured on pages 38-39 of the AD&D Monstrous Compendium Annual Volume Three (TSR2166) hasn’t been seen in any official 5e publication. Nor the Banelich on page 10 of that same publication, or the Bvanen from page 18, or the Cilbadrin on page 22, or the Jabberwock on page 66, or the Tether Beast on page 108.
But the Hound of Ill-Omen on page 57 did get turned into a 6th level class feature for shadow Sorcerers though.
But if you want me to do more than just pick a handful of random examples out of one particular compendium then sorry, I got better stuff to do.
I’m sorry, I don’t believe that WotC has done a Dark Sun conversion for 5e. And you said “that’s” but I listed 6 different monsters so you’re going to have to be just a tad more specific.
'added to 5e' as in official wotc pubs - just looking at dragons alone there's probably 50+ that aren't officially in 5e...and wildly guessing100+ when you start looking at wyrms and other variants.
Its a silly and pointless answer if you don't include everything that has been published on DmsGuild. Hell Ed Greenwood publishes stuff there since WOTC is very limited in what they official publish.

What are some monsters from old editions that havent been added to 5e?
I doubt there are very many left since there have been years of extra content created. Dmsguild has lots of the oddball stuff.
There are literally hundreds of monsters from previous editions that haven't been added to 5E. Probably thousands.
Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
As with most other questions about D&D, the first two answers you get will most likely be polar opposites of each other.

There was 350 monsters in the MM. There is 4-5000 or so in 5e.
