I believe the plan is for the addition to support companions, familiars, pets, cohorts, followers, and hirelings. Possibly even sell-swords and sword sellers.

Yeah, this is a glaring gap in the character sheet. If I have to track the animal companion separately, there is not much point in using the digital character sheet. It is easier to just use printed sheets.
How does a Ranger with an Animal Companion setup their companion in DnD Beyond?
You don't, yet. Wait a month or two, though, and it should be in place.

Animal companions, druid wildshape etc will all be part of the new character sheet that is coming.

In the July developer preview, Badeye said it was being worked on currently. So I believe it will be out before the end of 2018.
