Is there a way to add an item to a homebrew monster (ex: Longsword) for their attacks without having to type out the entire description and code block?
Yes, find another monster that already has a Longsword, use that as a template to make another monster just so you can copy/paste the part you need into your monster. Then you would just need to adjust the attack and damage bonuses to reflect your monster’s Str instead of the original. (You can then delete the unnecessary extra monster.
Additionally, if all you are doing is changing the weapon they are using, you just need to remember to change the weapon dice and sometimes range, and then you don’t need to worry about anything complicated.
