I’m attempting to create a spellcasting feat a lot like Strixhaven Initiate: you can choose two out of three cantrips, and one first-level spell from a full caster’s list. Is it possible to do this using DnDBeyond, and, if so, how would I do it?

Yes it is possible. The easiest way to learn how is to use one of the Strixhaven feats as a Template so you can dissect it to see how it works.
