Really want to expand options for class features like Fighting Style

I would really like to add more fighting styles to e.g. Paladin.

Is there any way to do this as homebrew?

Just make it a feat. Standard way to deal with the imperfections of D&D Beyond.

Yeah, a workaround like a feat is your best bet. There is currently no way to affect base class features in homebrew.
