Having checked the Homebrew FAQ page, I assume its still not possible to add options that aren't actions to a feat?

I want to have my homebrew feat give either Acrobatics or Athletics proficiency.

Still not a thing, no. And unless that particular combo is a Subtype Option for the Modifier, then your only solution is to make two versions of the feat.
