Not sure what I'm missing but I've tried several different ways to embed a monster stat block in a subclass ability like the Steel Defender or the primal beast options.
I've cut and pasted the stat block, edited to suit what I want and saved and I've also copied a subclass (Battle Smith) that already has a stat block in it but if I go back to edit that ability after I save, the entire field, including all the descriptive text and the stat block is blank. However, if I look at the preview in the list of homebrew creations, the stat block and the text is there.
I thought maybe I'd need to look at the source code or something but no luck. I've tried searching around but I can't see anyone else having the same issue. Had a look at some of the pinned tutorial threads but I think this is a pretty niche thing that isn't addressed that I could see.
What, no doubt, incredibly obvious thing am I missing?
First off: Are you running any ad/popup blockers, browser extensions, or a VPN that may be interfering with DDB?
Second: Whenever I do it (more than one might expect), I don’t copy/paste from monster statblocks, they gave me issues too. Instead I either copy/paste from a monster that is already designed for class feature use (like Artificers’ Homunculus Servant & Steel Defender/Improved Steel Defender, or the Rangers’ Drake Companion) or, alternatively I have found the ones from those new “summon [something]” spells in Tasha’s work well too. The difference is that the coding the used for the yellow colored “normal monster statblocks” doesn’t play nice with the sheet (or vice versa), but the coding for the white ones with the silver boarders works better.
(In addition, make sure when you drag highlight to Copy that you capture some text both above and below the statblock so it doesn’t miss something dumb like a </div> And inadvertently throw the whole thing out of whack.)
Here, try them both out and see if the second one isn’t better for you.

Damage Immunities determined by the drake’s Draconic Essence trait
Draconic Essence. When you summon the drake, choose a damage type: acid, cold, fire, lightning, or poison. The chosen type determines the drake’s damage immunity, the damage of its bite, and the damage of its Infused Strikes trait.
Actions
Bite. Melee Weapon Attack: +3 plus PB to hit, reach 5 ft., one target. Hit: 1d6 piercing damage plus PB damage of a type determined by the drake’s Draconic Essence.
Reactions
Infused Strikes. When another creature within 30 feet of the drake that it can see hits with a weapon attack, the drake infuses the strike with its essence, causing the attack to deal an extra 1d6 damage of the type determined by its Draconic Essence.
As naruhoodie said, Beyond20 is neither affiliated with nor endorsed by DDB. In fact, most problems like yours can usually be tracked back to Beyond20 or some other browser extensions, especially for chrome. (That’s part of why I use Safari.) Which was why it was the first thing I mentioned.

Hello, I'm really trying to add a companion creature just like the drakewarden/beastmaster ranger, for a sorcerer subclass (only difference is that I have different creature options to choose from), is there some way to have the automatic and nice scaling statblock just like the companions from those sublclasses in the action tab?

It looks like the VTT extension for chrome touted by DDB is the issue.
Logged into DDB on a different browser and it appears fine.
Should I report this as a bug with DDB? I'm not sure what sort of relationship they have with Beyond 20.
Beyond20 is by a third party, unaffiliated with DDB. You'll need to let them know about the issue.
