Lets say - hypothetically, of course - that someone (certainly not me!) published a homebrewed monster, then realized there was a tiny mistake, and needed to update it. Now there are three copies of this hypothetical homebrew content, yet no way to remove them. Is there a process that someone - certainly not me! - would use to remove erroneously submitted content?
To update a published homebrew, you can use the "Create New Version", this will allow you to edit as needed and then reshare the update with the community.
You may see each of the different versions in your Created Content section - you can remove the older versions from here.
As for removing homebrew from the public lists - we are limited here. If there is a copyright issue then yes, otherwise we would need there to be no one who had added the homebrew to their collection. All of this is covered in the Homebrew rules - ideally people should only be sharing content that is finished and ready to be released.

WotC is a major corporation with many highly paid designers and even they use UA as a way to soft-release something before it is published. Once they publish a finalized version, they expect DDB to archive the older version. As “independent designers” who don’t have the resources of WotC, we need the ability to soft-release even more than they do. Why is it so unreasonable to ask that you archive our old stuff too? You did it for Mercer’s Bloodhunter, why not the rest of us?
Badeye has expressed a number of times on the Dev Update Streams that the homebrew system isn't where we would like it to be - it was released to help fit a gap, which was allowing users to customise their characters. Since then it's evolved from that, where many see it as a condiuit to sharing their designs, despite this not being its intended main function.
a revamp of the homebrew tools is on the cards, but I personally dont envision this happening soon as there are other features the team are currently working on.

I can totally appreciate that. My question is, if Matt Mercer can request that his outdated Homebrew be Archived, why can’t we? Even with the system the way it is, the creator should still be able to archive old versions. Anyone who has the old can keep it, but anyone new gets the new version. Seems only fair.
Which is what the Create New version feature does. If you have created and published homebrew (lets say a spell), and I have added that spell to my homebrew collection and then you use the Create New Version - I still have access to the old version. When you publish the update, the old version no longer shows in the homebrew listings and other users that add it have the new version. I will still have the old version until I choose to remove it from my collection.
Then how come even though I have removed the old versions of stuff from my collection every version still shows up in certain fields for me? For example, if I go to add a spell to a homebrew subclass/feat/magic item/race, every version of A Grasping Light, as well as every copy of every other homebrew I have ever made shows up, not just the one of each that I have in my collection. If they are all archived, and I removed the old versions from My Collection, why am I still haunted by their ghosts?

Wary the wizard who focuses on homebrew, for he can create nightmares that you wouldn't even dream of

Collection and Creation are two seperate lists - once you remove it from your Creations it should be gone.
