I am trying to create a homebrew feat for the Minotaur Race that I have unlocked on DnD Beyond but it won't let me choose the race as a prereq. Has anyone else ran into this problem?
Not all of the races are in the system properly. I encourage you to take this up in the feedback forum or the bugs and support forum as that is where they are currently looking for people to point out stuff exactly like this! The more stuff gets pointed out, the better they can fix it.
