So, one of my players is an eldritch knight. How do you think I should handle extra attacks, considering eldritch knights get spells? Should I limit the extra attack feature to cantrips? I think free double fireball would be too OP.
Extra Attack is only for the Attack action, spells use the Casting a Spell action. Furthermore, Fireball is not an attack anyway.
Addition: A player can only cast one non-cantrip spell a round. Therefore, regardless of method, a person casting multiple Fireballs in one turn is impossible.
Double fireball is possible with eldritch knight because of Action Surge.
Cantrips already scale to match a Fighter's number of attacks so yes, letting an Eldritch Knight cast multiple cantrips per turn is going to be absolute overkill.

True, true. Maybe I'll make it so that when a two cantrips are cast with extra attack feature, then it is only cast as if they were cantrips cast by level 1 characters.

Or you could only have Extra Attacks work with only weapon attacks just like the game is designed and not do all of that extra work for absolutions reason whatsoever since Extra Attack doesn’t work with Spells.

There are a TON of problems allowing people to convert attacks into spells.
Among other things it is already easy for an Eldritch Knight to cast 4 spells in a round. In addition they get :
Extra attacks are not spells and trying to make them one will screw up a lot of things.
