better focus for me (since I tend to not have favorites, lol) is "what do you think is overdone and what isn't?
Greco-roman and Norse are done to death.
People really need to look at Chinese, Yoruba, and Incan.
Game wise, moving away from the "personification" trope that underlies a lot of the PIE derived stuff (skygod, earth mother, et al) to gods who are just freaking crazy is more appealing to me.
In my currently in development setting, I took the core PIE (nameless now) for a more shamanistic pantheon and then I went full Cthulhu with them, lol. lacking worshippers, they are corrupted and have become less "rigid" in their natures -- they are coming apart, and now I can use them as immense and vast eldritch horrors, lol. They are The Old Ones now, lol.
That is in addition to the Powers that be that are the defacto gods of the setting (along side some Powers of the World that are not "actively" worshipped).

I read mythology and folklore all the time, but do you want to hear about folklore? I normally am interested in reading about creatures from mythology and folklore, and have moved away from reading Greek and Roman, and Norse stories because they are overdone and have been reading Slavic, African, Middle Eastern lore, fearsome critters, and yokai. There is some awesome stuff there that most people don't look at.
What are you looking for here, just mythology, or will folklore and maybe even some cryptid lore be accepted?

I really like D&D, especially Ravenloft, Exandria and the Upside Down from Stranger Things. My pronouns are she/they.
All cultures have cool mythology, but I really like the fearsome critters from lumberjack lore, Middle eastern tales, and Slavic mythology. Yokai are cool too because of how many unique creatures there are. There are evil umbrellas, shapeshifting goblin spiders, evil yet polite sumo turtles, it is so fun to read about.
The sacrifices mostly came from prisoners captured from conquered or enslaved tribes or kingdoms (including Mayan and the assorted Andean peoples (Incan, et al).
the Mayans did as well, but were a bit different about the specifics.
