I'm currently working on a project, where I make a homebrew warlock subclass for each 5e class. So like the oath keeper would give paladin like abilities, the champion would have fighter like ones, the archmage would have wizard like ones, and so on for each class. Sound cool?

After you do this, lets compare our two fighter warlocks!
That would certainly be cool for certain classes, but I don't know if it needs to be so specific or if all classes need that. Like. . . a barbarian or fighter patron? What? How? Also, the Celestial subclass basically covers Cleric and Paladin already.

So now we need a Beast, Construct, Dragon, Elemental, Giant, Monstrosity, Ooze and Plant patron. I suppose you could do humanoid too.
I've actually been trying to do some of those. I'm not doing Monstrosity, as that's too large of a category, and humanoid shouldn't be a pact, IMO.
Beast could be a type of magical beast, such as an elder lycanthrope or powerful awakened animal.
Construct is already one of my homebrew, so I got that done.

Elemental does need to exist. There will be people who will yell at you because the Genie pact exists, but that's specific to genies. We need just a general elemental themed one.

If the Primal Spirits were still a thing (in the capacity that they did in 4e that is) then you could make a warlock pack that you can then specialize further into by picking to follow a plant spirit of an animal spirit.

Yes we freaking can. The Horizon Walker's subclass is themed at protecting the Material Plane from invaders from other planes. Fey Wanderers are specifically WANDERERS of the FEYwild. They're people who hunted through the feywild and got some fey magic from travelling through it. (Side Note - How is this ranger subclass the closest official thing we have to a Fey-touched Sorcerer subclass? That's just weird.)
This is the opposite of that. The Horizon Walker doesn't care about what plane you're from, they hate you. The Fey Wanderer is specific to the Feywild. Genie-patron warlocks are specifically WARLOCKS bound to GENIES. A general elemental patron warlock would be a WARLOCK bound to any other non-genie ELEMENTAL. Saying that one large thing can't exist because a smaller, more specific thing exists is like arguing that people from Northern Ireland aren't allowed to celebrate Saint Patrick's Day, just because it's a part of the UK.
All of the spells in the "Genie" column of the Expanded Spell List for the Genie Warlocks don't fit a generic "elemental" warlock. Genie's Vessel doesn't fit a generic elemental warlock at all (except for maybe Genie's Wrath, which works in all but name). The flight part of Elemental Gift doesn't fit for any of the elementals except Air. Sanctuary Vessel also doesn't fit a general "elemental-bound" warlock. The same is true for Limited Wish. Wish-like features are genie-specific, not generic elemental-specific.

Divine Soul is Celestial and, if you can expand enough, Fiend. Storm Sorcery only fits specific air and water elementals. Shadow Magic would fit Undead, I guess. And Fey. There has to be one for Fey.

Plants and oozes. 5e doesn’t have enough of those. Can we have a Summon Plant Creatures spell? An Ooze Heart sorcerer? And a lot more ooze and plant creatures?
By the way, Humanoid could have one. I’m thinking the Hero or something like that.
