Can a character be under the effect of more than one potion at a time? IE, they drink a Potion of Water Breathing one round and a Potion of Heroism the next before diving into a potentially dangerous lake to retrieve an item from the bottom? Or they drink a Potion of Flying one round then a Potion of Speed the next round and then fly at double speed?
There's no rule that says they don't, but there is a variant rule for having unique effects when mixing potions. Check out the "Mixing Potions" sidebar in the DMG section on potions, here.

Note that mixing does include 'mixing after you drink them'. Though the rules are a bit less lethal than they were in AD&D, due to PCs generally having more hit points and "death to poison, no save" not being on the list.
Our normal rule was that you could not safely mix potions if the first potion was still in effect( not counting instant potions like healing)
If you took a flying one round and the next a haste to increase the flying speed they would be considered as mixed in side you and thus capable of interacting and having bad effects.

Combining Different Effects is fine. The only limitation would be drinking the same potion more than once.
