Let's say I'm 2 Levels of Moon Druid, and 5 Levels of Monk
I wild shape into a Lion and then use the pounce feature. If the lion moves at least 20 feet straight toward a creature and then hits it with a claw attack on the same turn, that target must succeed on a DC 13 Strength saving throw or be knocked prone. If the target is prone, the lion can make one bite attack against it as a bonus action.
Knowing that I can use my Extra Attack with my claws, if I move 20 ft and then make 2 claw attacks, does the opponent have to make 2 saving throws? (Assuming the 1st succeeded)
From the way it's worded I'd assume so, but double checking.

Whilst Wild Shaped into a Lion, you get the attacks that are normally available to a Lion - this doesn't include additional attacks based upon classes & levels.
Unless there is an official ruling that says otherwise somewhere.
If you did manage to acquire multiple claw attacks in a single turn though, the text under pounce is quite explicit, "If the lion moves at least 20 feet straight toward a creature and then hits it with a claw attack on the same turn" meaning that yes, both attacks would require saving throws, as they fulfill the requirements of the pounce ability.
It's too bad the lion's claws aren't considered unarmed attacks like the claws on playable races - then you you could Flurry of Blows and make them roll 4 times to not be knocked prone....

And you can even do things like Stunning Strike because beast attacks are usually considered melee weapon attacks.

I believe you can use Extra Attack in wildshape, and yes the target should make a save for every time is hit by Claw attack.
