Yes you're interpreting it wrong. It just adds 1 to the 'to hit' modifier and 1 to the 'damage' modifier over what you would normally add. It's not 1 per die roll.
Lets say your normal greatsword attack would be 1d20+7 to hit (+4 from strength and +3 from proficiency) and 2d6+4 to damage. It would become 1d20+8 to hit and 2d6+5 to damage.

Since magic ammunition is single-use, you might allow them to stack with the weapon's bonus.

Yes, they are 100% intended to stack. If you fire a +3 Arrow using a +3 Longbow, you will benefit from the total +6 to both Attack and Damage rolls.

Weapons & ammunition are distinct items, and may each be enchanted with magical effects. They are used together, so their bonuses are additive.
Weapon, +1 & Ammunition, +1 are not the same item, so they do not run afoul of "multiple items of the same kind".
Weapon, +1 & Ammunition, +1 are used together, but they are not paired items. You can have a magic bow without magic arrows (or vice versa), and that doesn't change how either item functions.
Worth noting is that you can also have other items such as the Bracers of Archery on top of magical weapons & ammo.

Thanks all, I was just trying to prove an argument. And you all gave me my ammo needed. plus I found the PH Errata.pdf. The other party was trying to use the combining magical effects rule.

while reading through magic items to decide what to give my players, i realized that the +1/etc weapons are phrased as such:
"You have a +1 to attack and damage rolls with this magic weapon."
so, for example, if i had a +1 greatsword, which deals 2d6 damage, i would be dealing an extra two damage--a +1 for each damage roll.
am i interpreting this wrong?

Highest 41: brocker2001 (#11,285).
Yahtzee of 2's: Emmber (#36,161).
Lowest 9: JoeltheWalrus (#312), Emmber (#12,505) and Dertinus (#20,953).
For the Greatsword, which does 2d6 damage, those two dice are rolled and added together, which is the "damage roll" referred to.
As such, it's 2d6 and then you add 1 damage for the +1 weapon.
