Pan fits the Archfey theme. Thanatos fits the Undying. Posiedon could be a Fathomless if you bend the theme a bit. Most of the others can be Celestial, but the best ones for this are Hebe, Hera, and other more "celestial" deities. Tartarus, the Furies, and the demons of the Underworld normally fit the "Fiend" patron. Hades could be a Hexblade patron, but that's kind of stretching it.
As for the Great Old One and Genie, I can't really think of any that would fit. Other than these two, I hope this helps.

I'm in a Greek-themed campaign, and have a Devotion/Celestial PadLock who worships Athena for the Paladin side of things, and has Alke as a patron for the Warlock "half." I had to really think about making this work, as she's LG aligned, so I didn't want anything that conflicted with that.
Athena grants wisdom, Alke grants courage. (PC is a 14 year old girl, so... those are 2 things a very young adventurer needs.)
Great Old One could be any of the titans. Chronus, Gaia... Fiend could be Tartarus. For Fathmoless, Oceanus. Celestial could be Zeus, Apollon or even Artemis. Genie doesn't come to mind rn. Hexblade could be something from here. Archfey could be Pan, or Artemis if you really stretch it.
The “revelry” of the fey suits a Dionysius patron well...the invisibility / misty step feature would be good for a huntress like Artemis (a spectral bow that appears for “Eldritch Blast” is thematic), “Plant Growth” for Demeter. Aphrodite due to charms.
Hexblade - Hades , Hermès
Shadowy power? Check. Shepherding specters briefly is within the domain of both Hades AND Hermès...the “teleporting” feature of the Hexblade invocation suits the speediness of Hermès, too.
Celestial - pretty much all of them...but the fiery aspect is so very Apollo & Helios. Athena for that shining image of honorable battle.
Great Old One - Chaos
Pretty much as eldritch as Greek Myths got.
Fathomless - Poseidon!
Fiend - Ares
Ares would probably be a Hexblade...but I find Fiend really evokes the “fury” of warfare.
Maybe “Hurl Through Hell” could be flavored as hurling through a spectral battlefield.
For Genie, I'd consider Eris. Genies are known for twisting wishes, the goddess of discord who gave the apple of discord as a gift when she was not invited to a wedding which helped spawn the Trojan War

For the Great Old One, I'd recommend Nyx, the goddess of the night. Even Zeus was afraid of her.
Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.

The Titan Typhon I think fits The Great Old one very well
