Infinite hp steam mephit?
If you want to spice these guys up and give them different rolls, make a steam mephit with a ranged attack that deals 4 steam damage, has 15 hp, and who does not explode upon death. Then make a melee steam mephit who doesn't have steam breath, but whose claw attacks singe the players nerves causing disadvantage on attacks against other creatures for a round.
Underwater environment but no swim speed?
