During my third session of DnD as this character I used Gem Flight at the end of a match and my DM was confused. It didn’t change the outcome of anything so we just agreed to look it up and let the action slide for the time. He thought it was a feature I didn’t have until level 5. I don’t have strong feelings either way and we’re going to hold until the level requirement in the book for the campaign, but still curious about the groups thoughts.
To clarify the OP is talking about the Gem Flight racial ability of the Gem Dragonborn in Fizban's.
The feature says "Starting at 5th level", but even for levels 1 to 4 the character sheet shows this feature without the "Starting at 5th level" text in the snippet.
Can confirm, this is a bug.

Everything I am seeing on Dndbeyond says that you get Gem Flight at level 5. I don't have the physical book, but Dnd Beyond is required to put what is in the book onto their website, typos and all.
Edit: I Saw Cyber's post after I made mine. Ignore me.
DDB is currently not able to delay showing Race traits until the character reaches a certain level, aside from limiting access to innate spells until particular levels.
That being the case, the snippet for Gem Flight really should say "Starting at 5th level" to avoid confusion, as Cyb3rM1nd noted.
